Cosce di pollo al curry in padella
Le cosce di pollo intere al curry sono preparate in poco tempo e con pochissimi ingredienti. Vi servono delle cosce di pollo intere di medie dimensioni, ben pulite, del buon curry, del vino rosso e tanto riso Basmati.
Io sono una vera amante del pollo, lo mangerei in ogni modo e, a volte, anche ogni giorno. È un alimento leggerissimo e può essere cotto in tantissimi modi diversi.
Quando sono di fretta il modo più veloce di cuocere il pollo è certamente in padella. In cucina sicuramente la cosa più importante, soprattutto quando si va di fretta, è la praticità. E io amo le ricette pratiche, soprattutto quando lavoro fino a tardi. Non sono una amante della frittura e tendo a cucinare tutto in umido, grigliato oppure al vapore. Lo trovo molto più salutare e soprattutto ideale a una vita sana.
Il curry fa parte di quelle spezie che uso molto volentieri nella mia cucina. Io adoro tutte le spezie indiane, ma il curry ha sicuramente un posto speciale nei miei piatti. Così come la cucina indiana.
Mi trovo spesso a improvvisare ricette in cui non possono mancare delle manciate di questa deliziosa spezia dorata.
Il curry non è una semplice spezia, è in realtà una miscela di spezie. L’ingrediente principale del curry, quello che gli dà il colore giallo che conosciamo, è la curcuma, che molti usano per le proprietà antiinfiammatorie e disinfettanti, che proteggere lo stomaco, il fegato e l’intestino. Gli altri ingredienti fondamentali del curry sono il coriandolo, il cumino, la cannella, i chiodi di garofano, lo zenzero, la noce moscata, il fieno greco (Helba) e il pepe nero o il peperoncino. Inoltre, a questi, a seconda della ricetta, si aggiungono altri ingredienti come l’aglio, i semi di Potete utilizzare questa miscela in tantissime preparazioni, soprattutto nelle zuppe, vi darà delle ottime soddisfazioni.
In questa ricetta utilizzo il riso Basmati
Il riso Basmati è previsto nella ricetta originale del pollo al curry, e io lo preferisco ad altre tipologie di riso, perché durante la cottura non si sfalda e non scuoce. Se non siete dei grandi esperti di riso, e non avete molto tempo per dedicarvi a lunghe letture, mi sento di consigliarvi questo tipo di riso, in quando molto adatto a essere servito come contorno con tantissime tipologie di piatti.
Ricordate sempre di lavare il riso prima di metterlo a cuocere. Il riso è noto per avere una altissima percentuale di sostanze, anche nocive alla salute (come piccole quantità di arsenico), derivate dalla lavorazione e dal terreno in cui questo cereale viene coltivato. A volte basta semplicemente mettere il riso in ammollo un’ora oppure lavarlo sotto acqua corrente per un minuto per eliminare grande parte di queste impurità.
Cosce di pollo al curry in padella
Ingredienti
- cosce di pollo intere
- 4 cucchiai curry
- ½ bicchiere vino rosso
- olio di oliva
- timo
- rosmarino
- sale
- pepe
- dragoncello
- salvia
- 100 ml di acqua (½ cup)
Istruzioni
- Mettete le quattro cosce di pollo pulite in una ciotola capiente. Condite con rosmarino, timo, dragoncello e salvia. Strofinate bene con le mani le spezie su entrambi i lati della carne.
- Aggiungete un filo d'olio e girate.
- Trasferite le cosce di pollo in una pentola capiente, aggiungete sale e pepe a piacere e un filo d'olio. Coprite con un coperchio.
- Cominciate la cottura a fuoco medio.
- Lasciate cuocere per circa 20 minuti. Girate le cosce circa ogni 5 minuti, per permettere alla carne di cucinare uniformemente.
- Aggiungete il vino e continuate la cottura.
- A parte, mettete a bollire una pentola con abbondante acqua, per preparare il riso Basmati.
- Lavate il riso sotto acqua corrente, scolate e tenete pronto.
- Aspettate che l'acqua cominci a bollire, aggiungete il riso, del sale e lasciate cuocere fino a cottura indicata sulla confezione. (In base alla marca il riso a volte ha tempi di cottura diversi).
- Dopo 20 minuti aggiungete il curry in polvere.
- Aggiungete l'acqua, che mescolandosi con il curry creerà un brodino che aiuterà la cottura.
- Coprite e lasciate cucinare altri 5 minuti.
- Controllate,aiutandovi con forchetta e coltello che il pollo sia cotto.
- Vi consiglio di tagliare un po' vicino all'osso delle articolazioni, solitamente quello è uno dei punti critici della cottura del pollo.
- Scolate il riso Basmati. Trasferitelo nei piatti da portata.
- Accompagnate il riso con le cosce di pollo intere al curry, appena cotte.

Conservazione e Consigli
Il riso Basmati può essere servito in bianco, oppure potete irrorarlo con i succhi di cottura del pollo. A me piace tantissimo con un po' di burro e pepe. Se volete accelerare i tempi di cottura potete tagliare le cosce in due e così avere dei pezzi più piccoli da cucinare. Solitamente quando preparo questo piatto non succede mai di avere avanzi, ma se vi capita potete benissimo conservare il pollo al curry in frigorifero e riscaldarlo il giorno dopo in microonde oppure in padella. Sarà buonissimo, come appena cotto.
